Loaded Potato Taco Bowl

A delicious and hearty Loaded Potato Taco Bowl that combines the comfort of mashed potatoes with the bold flavors of tacos.

  • 4 large russet potatoes
  • 1 cup shredded cheese
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1/2 cup sour cream
  • 1 cup chopped green onions
  • 1 cup diced tomatoes
  • 1 cup black beans, drained and rinsed

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Bake the potatoes for about 45 minutes or until tender.
  3. While the potatoes are baking, cook the ground meat in a skillet and add the taco seasoning.
  4. Once the potatoes are done, remove them from the oven and let them cool slightly.
  5. Cut the potatoes in half and scoop out some of the insides.
  6. Mix the potato insides with cheese, sour cream, and taco meat.
  7. Fill the potato skins with the mixture and top with more cheese.
  8. Bake for an additional 15 minutes until the cheese is melted and bubbly.
  9. Serve topped with green onions, tomatoes, and black beans.
