Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • Salt to taste
  • Black pepper to taste
  • 1 lemon, juiced
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Spiralize the zucchini to create noodles.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add garlic and red pepper flakes, sautéing until fragrant.
  4. Add shrimp and cook until pink, about 3-4 minutes.
  5. Add zucchini noodles, tossing to combine, and cook for 2-3 minutes.
  6. Season with salt, pepper, and lemon juice.
  7. Remove from heat and stir in fresh parsley before serving.
