  • 1 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon ginger, grated
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 3 cups mixed vegetables (broccoli, bell peppers, carrots)
  • 2 tablespoons sesame oil
  • 3 green onions, chopped

Instructions

  1. In a medium bowl, whisk together peanut butter, soy sauce, honey, ginger, garlic, and chicken broth until smooth.
  2. Heat sesame oil in a large skillet over medium heat. Add chicken thighs and cook until browned and cooked through, about 6-7 minutes.
  3. Pour the peanut sauce over the chicken and stir to combine.
  4. Add the mixed vegetables and cook until they are tender, about 5 minutes.
