  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cups diced carrots
  • 2 cups diced celery
  • 3 cups vegetable broth
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 2 cups diced potatoes
  • 1 cup milk
  • 2 tablespoons flour
  • salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. Add olive oil to the pot and sauté the onion and garlic until fragrant.
  3. Add carrots, celery, and potatoes; cook for about 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Add thyme, frozen peas, and crumbled turkey bacon. Simmer for 15 minutes.
  6. In a separate bowl, whisk together milk and flour. Stir into the soup and cook until thickened.
  7. Season with salt and pepper before serving.
