  • 1 cup lentils
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1 bell pepper, chopped
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 1 cup corn
  • 1 lime, juiced

Instructions

  1. In a pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Stir in the cumin, paprika, and chili powder, cooking for another minute.
  4. Add the bell pepper, lentils, vegetable broth, and diced tomatoes to the pot.
  5. Bring to a boil, then reduce heat and simmer until lentils are tender, about 25-30 minutes.
  6. Stir in the corn and lime juice, and cook for an additional 5 minutes.
  7. Serve warm.
