- 1 cup corn
- 1 cup shredded cheese
- 8 flour tortillas
- 1 cup enchilada sauce
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, sauté the onion, bell pepper, and garlic until soft.
- Add black beans, corn, cumin, and chili powder to the skillet; stir to combine.
