Vegetarian Black Bean Enchiladas

A delicious and easy recipe for vegetarian black bean enchiladas that are perfect for a comforting meal.

  • 1 cup corn
  • 1 cup shredded cheese
  • 8 flour tortillas
  • 1 cup enchilada sauce
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté the onion, bell pepper, and garlic until soft.
  3. Add black beans, corn, cumin, and chili powder to the skillet; stir to combine.
  4. In a large baking dish, spread a layer of enchilada sauce on the bottom.
  5. Fill each tortilla with the black bean mixture, sprinkle cheese, and roll.
  6. Place the rolled tortillas in the baking dish and cover with remaining enchilada sauce and cheese.
  7. Bake for 20-25 minutes until bubbly and golden brown.

Notes
