Vegan Zucchini Rollatini

A delightful vegan twist on traditional rollatini, featuring zucchini as the star ingredient.

  • 3 large zucchinis
  • 1 cup vegan ricotta cheese
  • 1 cup marinara sauce
  • 1/2 cup nutritional yeast
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon basil
  • Salt to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips.
  3. In a bowl, mix vegan ricotta, nutritional yeast, garlic, oregano, basil, and salt.
  4. Spread some marinara sauce on the bottom of a baking dish.
  5. Take a zucchini slice, place a spoonful of the ricotta mixture, and roll it up.
  6. Place the rollatini in the baking dish seam side down.
  7. Top with remaining marinara sauce.
  8. Bake for 25-30 minutes until heated through.

Notes

  • For added flavor, sprinkle nutritional yeast on top before baking.
  • Ensure the zucchini is thinly sliced for easy rolling.
