Vegan Rainbow Peanut Noodles

A delightful and easy-to-make vegan dish that combines colorful vegetables with a creamy peanut sauce.

  • 1 cup red bell pepper, sliced
  • 1 cup carrots, julienned
  • 1 cup cucumber, julienned
  • 1 cup purple cabbage, shredded
  • 1/2 cup green onions, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup creamy peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons maple syrup
  • 1 tablespoon sesame oil
  • 1 tablespoon lime juice
  • 1 teaspoon garlic, minced
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. In a large bowl, combine the bell pepper, carrots, cucumber, purple cabbage, green onions, and cilantro.
  3. In a separate bowl, whisk together the peanut butter, soy sauce, maple syrup, sesame oil, lime juice, garlic, and red pepper flakes until smooth.
  4. Add the cooked noodles to the vegetables and pour the peanut sauce over the top. Toss to combine.
  5. Serve immediately, or chill in the refrigerator for later.

Notes

  • Feel free to swap in any vegetables you like or have on hand.
  • This dish can be made ahead of time and stored in the fridge for quick lunches.
