- 8 ounces mushrooms, sliced
- 1 cup vegetable broth
- 1 cup coconut cream
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 teaspoons cornstarch
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 12 ounces pasta, cooked
- Salt and pepper to taste
- In a skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent.
- Add garlic and sliced mushrooms, cooking until mushrooms are browned.
- Stir in vegetable broth, soy sauce, thyme, and paprika. Bring to a simmer.
- Mix cornstarch with a little water to create a slurry and add to the skillet to thicken the sauce.
- Pour in the coconut cream and stir until combined and heated through.
- Serve over the cooked pasta and season with salt and pepper.
