Vegan Mushroom Stroganoff

A comforting vegan dish that brings the flavors of traditional stroganoff to your table with a delicious creamy sauce made from mushrooms.

Ingredients

  • 8 ounces mushrooms, sliced
  • 1 cup vegetable broth
  • 1 cup coconut cream
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons cornstarch
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 12 ounces pasta, cooked
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent.
  2. Add garlic and sliced mushrooms, cooking until mushrooms are browned.
  3. Stir in vegetable broth, soy sauce, thyme, and paprika. Bring to a simmer.
  4. Mix cornstarch with a little water to create a slurry and add to the skillet to thicken the sauce.
  5. Pour in the coconut cream and stir until combined and heated through.
  6. Serve over the cooked pasta and season with salt and pepper.

Notes

  • For added flavor, include a splash of white wine.
  • Serve with fresh herbs for garnish.
