Vegan Chicken Salad

A delicious and easy vegan chicken salad recipe with a flavorful twist of turkey bacon.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/2 cup vegan mayonnaise
  • 1/4 cup celery, chopped
  • 1/4 cup red onion, diced
  • 1/4 cup pickles, diced
  • 1 teaspoon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 4 strips turkey bacon, cooked and crumbled

Instructions

  1. In a large bowl, mash the chickpeas with a fork until roughly mashed but still chunky.
  2. Add the vegan mayonnaise, celery, red onion, pickles, mustard, and seasonings. Stir to combine.
  3. Fold in the crumbled turkey bacon.
  4. Chill in the refrigerator for at least 30 minutes before serving.
  5. Serve on bread, lettuce wraps, or in a salad.

Notes

  • Adjust seasonings to taste.
  • Great for meal prep and can be stored in the fridge for up to 5 days.
