Vegan Bolognese Sauce

A delicious and hearty vegan bolognese sauce that is perfect for pasta nights and easy to prepare.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 cup mushrooms, chopped
  • 2 cans diced tomatoes (14 oz each)
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup lentils, rinsed
  • 2 cups vegetable broth

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery. Sauté for about 5 minutes, until softened.
  3. Add garlic and mushrooms. Cook for another 3 minutes.
  4. Stir in diced tomatoes, tomato paste, oregano, basil, salt, pepper, lentils, and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
  6. Remove from heat and let cool before serving.

Notes

  • Feel free to add your favorite vegetables.
  • Serve over your choice of pasta.
