- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1 cup mushrooms, chopped
- 2 cans diced tomatoes (14 oz each)
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup lentils, rinsed
- 2 cups vegetable broth
- Heat olive oil in a large pot over medium heat.
- Add onions, carrots, and celery. Sauté for about 5 minutes, until softened.
- Add garlic and mushrooms. Cook for another 3 minutes.
- Stir in diced tomatoes, tomato paste, oregano, basil, salt, pepper, lentils, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
- Remove from heat and let cool before serving.
