  • 1/4 cup brown sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate ganache

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar.
  3. Add the egg and vanilla extract, and mix until combined.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Drop by tablespoonfuls onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes, or until the edges are firm.
  8. Let cool before filling with ganache.
  9. Once cookies are cool, fill the centers with chocolate ganache.
