Tuscan White Bean Soup

This Tuscan White Bean Soup is a hearty and comforting dish featuring turkey bacon, perfect for chilly days.

Ingredients

  • 2 cups cannellini beans, cooked
  • 4 slices turkey bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced carrots
  • 1 cup diced celery
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, sauté onions, carrots, and celery until soft.
  3. Add garlic and cook for an additional minute.
  4. Stir in the cooked beans, vegetable broth, thyme, rosemary, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add the cooked turkey bacon back to the pot just before serving.
