Tuscan Vegan Gnocchi Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 6 cups vegetable broth
  • 1 (14-ounce) can diced tomatoes
  • 1 pound gnocchi
  • 2 cups kale, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and sauté until translucent.
  2. Add garlic, carrots, and celery; sauté for another 5 minutes.
  3. Stir in the dried herbs and cook for 1 minute.
  4. Pour in vegetable broth and diced tomatoes; bring to a boil.
  5. Add gnocchi and cook according to package instructions until tender.
  6. Stir in the kale and cook until wilted. Season with salt and pepper to taste.
  7. Serve hot and enjoy!
