  • 6 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound gnocchi
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chopped fresh parsley

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. In the same pot, heat olive oil and sauté the onion and garlic until soft.
  3. Add the chicken broth and bring to a simmer.
  4. Stir in the gnocchi and cook until they float.
  5. Add the cheddar cheese and heavy cream, stirring until smooth.
  6. Season with salt and black pepper.
  7. Stir in the chopped parsley and the chopped bacon before serving.
