  • 4 large ripe tomatoes
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the tomatoes and scoop out the insides.
  3. In a bowl, mix ricotta, Parmesan, basil, garlic, salt, and pepper.
  4. Stuff the tomatoes with the ricotta mixture and place them in a baking dish.
  5. Drizzle olive oil over the stuffed tomatoes.
