  • 8 ounces rice noodles
  • 1 pound boneless, skinless chicken breast, sliced
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1/2 cup peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon red pepper flakes
  • 1/4 cup green onions, chopped

Instructions

  1. Cook the rice noodles according to package instructions; drain and set aside.
  2. In a large skillet, heat sesame oil over medium heat and add the sliced chicken.
  3. Cook until the chicken is no longer pink, about 5-7 minutes.
  4. Add bell peppers, carrots, garlic, and ginger; sauté for another 3-4 minutes.
  5. In a bowl, whisk together peanut butter, soy sauce, red pepper flakes, and a splash of water.
  6. Pour the peanut sauce over the chicken and vegetables; stir to coat.
  7. Add cooked noodles and toss everything together; cook for an additional 2 minutes.
  8. Serve garnished with green onions.

Notes

  • For added flavor, marinate the chicken in soy sauce before cooking.
  • This dish can be made spicier by adding more red pepper flakes.
