  • 1 pound chicken thighs
  • 8 ounces rice noodles
  • 4 cups chicken broth
  • 2 cups coconut milk
  • 1 tablespoon red curry paste
  • 1 tablespoon fish sauce
  • 2 carrots, sliced
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 lime, juiced
  • 1 cup fresh cilantro, chopped

Instructions

  1. In a pot, heat oil and sauté garlic, onion, and ginger until fragrant.
  2. Add chicken thighs and cook until browned.
  3. Stir in red curry paste and cook for 1 minute.
  4. Add chicken broth, coconut milk, carrots, and bell pepper. Bring to a boil.
  5. Reduce heat and simmer until chicken is cooked through.
  6. Remove chicken, shred, and return to the pot.
  7. Add cooked rice noodles and lime juice. Stir to combine.
  8. Garnish with cilantro before serving.

Notes

  • Adjust the spice level by adding more or less red curry paste.
  • For a vegetarian option, substitute chicken with tofu and use vegetable broth.
