- 1 pound chicken thighs
- 8 ounces rice noodles
- 4 cups chicken broth
- 2 cups coconut milk
- 1 tablespoon red curry paste
- 1 tablespoon fish sauce
- 2 carrots, sliced
- 1 red bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 lime, juiced
- 1 cup fresh cilantro, chopped
- In a pot, heat oil and sauté garlic, onion, and ginger until fragrant.
- Add chicken thighs and cook until browned.
- Stir in red curry paste and cook for 1 minute.
- Add chicken broth, coconut milk, carrots, and bell pepper. Bring to a boil.
- Reduce heat and simmer until chicken is cooked through.
- Remove chicken, shred, and return to the pot.
- Add cooked rice noodles and lime juice. Stir to combine.
- Garnish with cilantro before serving.
