Taco Rice Bowl

A delicious Taco Rice Bowl loaded with flavors from turkey bacon and beef.

Ingredients

  • 1 cup cooked rice
  • 1/2 pound ground beef
  • 4 slices turkey bacon
  • 1/2 cup black beans
  • 1/2 cup corn
  • 1/2 cup diced tomatoes
  • 1 teaspoon taco seasoning
  • 1/4 cup shredded cheese
  • 1 avocado, sliced
  • 1/4 cup sour cream

Instructions

  1. Cook the rice according to package instructions.
  2. In a skillet, cook the turkey bacon until crispy, then remove and crumble.
  3. In the same skillet, brown the ground beef and add taco seasoning.
  4. In a bowl, layer the cooked rice, beef, black beans, corn, diced tomatoes, and crumbled bacon.
  5. Top with shredded cheese, avocado slices, and sour cream.
  6. Serve warm and enjoy!

Notes

  • Feel free to add any additional toppings such as jalapenos or cilantro.
  • This recipe can easily be made vegetarian by omitting the beef and turkey bacon.
