Sweet Potato & Cranberry Gratin

Ingredients

  • 2 pounds sweet potatoes
  • 1 cup fresh cranberries
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peeled and slice the sweet potatoes thinly.
  3. Layer the sweet potatoes and cranberries in a greased baking dish.
  4. In a separate bowl, whisk together cream, vanilla, sugar, cinnamon, nutmeg, and salt.
  5. Pour the mixture over the sweet potato and cranberry layers.
  6. Dot the top with butter.
  7. Bake in the preheated oven for about 45-50 minutes or until the sweet potatoes are tender.
  8. Let it cool slightly before serving.

Notes

  • For an even richer flavor, you can add a layer of grated cheese on top before baking.
