Street Corn Pasta Salad

Ingredients

  • 2 cups corn, grilled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/2 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside to cool.
  2. In a large bowl, combine the cooked pasta, grilled corn, cherry tomatoes, red onion, cilantro, and feta cheese.
  3. In a small bowl, whisk together the olive oil, lime juice, chili powder, and salt.
