  • 2 pounds baby potatoes
  • 4 strips turkey bacon
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and cut the potatoes into bite-sized pieces.
  2. Boil the potatoes in salted water until tender, about 15 minutes.
  3. While potatoes are boiling, cook the turkey bacon in a skillet until crispy, then chop.
  4. In a large bowl, mix together the sour cream, mayonnaise, mustard, green onions, garlic powder, salt, and pepper.
  5. Once the potatoes are cooked and drained, allow them to cool slightly before adding to the dressing mixture.
  6. Gently fold in the chopped turkey bacon and mix until well combined.
  7. Refrigerate the salad for at least 1 hour before serving.
