Spicy Peanut Soba Noodle Salad

  • 1 cup shredded carrots
  • 1 cup cucumber, thinly sliced
  • 1/2 cup red bell pepper, sliced
  • 1/4 cup green onions, chopped
  • 1/3 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon chili paste
  • 1 tablespoon sesame oil

Instructions

  1. Cook soba noodles according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine the noodles with shredded carrots, cucumber, red bell pepper, and green onions.
  3. In a separate bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, chili paste, and sesame oil until smooth.
  4. Pour the peanut dressing over the noodle mixture and toss to combine.
  5. Serve chilled or at room temperature.
