  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon cayenne pepper
  • 1 teaspoon smoked paprika
  • 1 cup rice
  • 1 bay leaf
  • Salt to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. In the same pot, add olive oil and sauté onions, garlic, and bell pepper until soft.
  3. Add the chicken ham, tomatoes, and spices, cooking for a few minutes.
  4. Pour in chicken broth and bring to a boil.
  5. Add rice and bay leaf, reduce heat, and simmer until rice is cooked.
  6. Stir in the chopped turkey bacon before serving.
