Spicy Corn Carbonara

A delicious and unique twist on traditional carbonara, featuring spicy corn and turkey bacon.

  • 2 cups corn kernels
  • 4 slices turkey bacon
  • 1 cup spaghetti
  • 2 eggs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Cook spaghetti according to package instructions.
  2. In a pan, cook turkey bacon until crispy, then chop and set aside.
  3. In the same pan, add olive oil and garlic, sautéing until fragrant.
  4. Add corn and red pepper flakes, cooking until corn is heated through.
  5. Whisk together eggs and Parmesan cheese in a bowl.
  6. Drain spaghetti and add to the pan with corn.
  7. Remove from heat and immediately mix in the egg and cheese mixture.
  8. Add chopped turkey bacon and stir well.

Notes

  • For a spicier version, increase the red pepper flakes.
  • This dish is best served immediately.
