Spicy Corn Carbonara

  • 8 ounces spaghetti
  • 4 strips turkey bacon
  • 1 cup sweet corn, fresh or frozen
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a pan, cook the turkey bacon over medium heat until crispy. Remove and chop into small pieces.
  3. In the same pan, add olive oil and sauté garlic for a minute. Add corn and cook until heated through.
  4. In a bowl, whisk together eggs, Parmesan cheese, red pepper flakes, salt, and pepper.
  5. Add the spaghetti to the pan with corn and bacon; quickly pour the egg mixture over the hot pasta and toss to coat.
  6. Serve immediately, garnished with extra Parmesan if desired.

Notes

  • This recipe can be made vegetarian by omitting the turkey bacon.
