Spicy Corn Carbonara

A deliciously unique take on carbonara that combines the sweetness of corn with the savory taste of turkey bacon.

  • 8 ounces spaghetti
  • 4 slices turkey bacon, chopped
  • 1 cup sweet corn kernels
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon crushed red pepper flakes
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook spaghetti according to package instructions; reserve some pasta water.
  2. In a skillet, cook turkey bacon until crispy, then add corn and sauté for a few minutes.
  3. In a bowl, mix eggs, Parmesan, salt, and pepper.
  4. Toss spaghetti with bacon and corn, then remove from heat and quickly stir in egg mixture, adding pasta water for creaminess.
  5. Serve garnished with parsley and additional cheese.

Notes

  • For a vegetarian version, omit turkey bacon and add extra vegetables.
