Spicy Corn Carbonara

A delicious and comforting dish that combines the flavors of corn and a spicy kick to traditional carbonara.

Ingredients

  • 2 cups sweet corn kernels
  • 200 grams spaghetti
  • 4 eggs
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the spaghetti according to package instructions until al dente.
  2. In a pan, heat olive oil and sauté garlic and corn until golden.
  3. In a bowl, whisk together eggs, Parmesan, red pepper flakes, salt and pepper.
  4. Combine hot spaghetti with corn mixture and egg mixture, stirring quickly to create a creamy sauce.
  5. Serve immediately, garnished with more Parmesan and red pepper flakes.

Notes

  • For a richer flavor, use pancetta instead of olive oil.
  • Can substitute corn with frozen corn if fresh is not available.
