A deliciously unique take on classic carbonara featuring spicy corn and turkey bacon.

  • 8 ounces spaghetti
  • 4 slices turkey bacon
  • 1 cup sweet corn, fresh or frozen
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the spaghetti according to package instructions until al dente.
  2. In a skillet, cook the turkey bacon until crispy, then remove and chop.
  3. Add garlic and corn to the skillet, sauté until corn is heated through.
  4. In a bowl, whisk together eggs and Parmesan cheese.
  5. Add the cooked spaghetti to the skillet, then remove from heat and stir in the egg mixture quickly.
  6. Mix in the chopped turkey bacon and red pepper flakes.
  7. Season with salt and garnish with parsley before serving.

Notes

  • For a vegetarian version, omit turkey bacon and add more vegetables.
