Delicious and easy to prepare, these Spicy Coconut Noodles with a twist of turkey bacon are perfect for a weeknight meal.

  • 8 ounces rice noodles
  • 1 tablespoon vegetable oil
  • 4 slices turkey bacon, chopped
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 2 cups mixed vegetables

Instructions

  1. Cook the rice noodles according to package instructions.
  2. In a large skillet, heat the vegetable oil over medium heat.
  3. Add the chopped turkey bacon and cook until crispy.
  4. Stir in the coconut milk and red curry paste, and bring to a simmer.
  5. Add the soy sauce and lime juice, followed by the cooked noodles and mixed vegetables.
  6. Toss everything together and cook for an additional 2-3 minutes until heated through.

  • If you prefer more spice, add extra red curry paste.
