  • 8 ounces pasta
  • 4 strips turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, rinsed and drained
  • 1/2 cup corn
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Cook pasta according to package instructions; drain.
  2. While pasta cooks, cook the turkey bacon until crispy; chop into pieces.
  3. In a large bowl, combine cooked pasta, turkey bacon, cherry tomatoes, black beans, corn, red onion, and cilantro.
  4. In a separate bowl, whisk together lime juice, olive oil, cumin, salt, and pepper. Pour over pasta salad and toss to combine.
  5. Chill for at least 30 minutes before serving.

  • This salad can be made ahead of time for easy meal prep.
  • Add diced avocado for extra creaminess.
