- 8 ounces pasta
- 4 strips turkey bacon
- 1 cup cherry tomatoes, halved
- 1 cup black beans, rinsed and drained
- 1/2 cup corn
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Cook pasta according to package instructions; drain.
- While pasta cooks, cook the turkey bacon until crispy; chop into pieces.
- In a large bowl, combine cooked pasta, turkey bacon, cherry tomatoes, black beans, corn, red onion, and cilantro.
- In a separate bowl, whisk together lime juice, olive oil, cumin, salt, and pepper. Pour over pasta salad and toss to combine.
- Chill for at least 30 minutes before serving.
