  • 4 cups sliced yellow squash
  • 1 cup chopped onion
  • 1 cup shredded cheddar cheese
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon crushed red pepper flakes

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, sauté the yellow squash and onion until tender.
  3. In a mixing bowl, combine the cooked squash mixture, cheddar cheese, turkey bacon, milk, eggs, salt, black pepper, garlic powder, and red pepper flakes.
  4. Pour the mixture into a greased baking dish and spread it evenly.
  5. Bake for 30-35 minutes, or until the casserole is set and lightly browned on top.
  6. Let it cool for a few minutes before serving.

Notes

  • This casserole can be made a day ahead and baked before serving.
  • Feel free to add other vegetables such as zucchini or bell peppers for variety.
