A deliciously comforting Southern Squash Casserole made with turkey bacon, perfect for family meals.

  • 4 cups sliced yellow squash
  • 1 cup chopped onion
  • 1 cup celery, chopped
  • 2 eggs, beaten
  • 1 cup shredded cheddar cheese
  • 1 cup crushed crackers
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, sauté the squash, onion, and celery over medium heat until softened.
  3. In a large bowl, mix the cooked vegetables with beaten eggs, cheese, crushed crackers, turkey bacon, salt, and pepper.
  4. Spread the mixture into a greased baking dish.
  5. Bake for 30-35 minutes or until the top is golden brown.

Notes

  • For extra flavor, consider adding a pinch of garlic powder.
  • You can use regular bacon instead of turkey bacon if preferred.
