- 4 large sweet potatoes
- 4 strips turkey bacon
- 1/4 cup maple syrup
- 2 tablespoons olive oil
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh parsley
- Preheat the oven to 400°F (200°C).
- Wash and peel the sweet potatoes, then cut them into cubes.
- In a large bowl, toss sweet potatoes with olive oil, cinnamon, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and bake for 25 minutes.
- While sweet potatoes are baking, cook the turkey bacon in a skillet until crispy.
- Remove the bacon from the skillet and chop into pieces.
- After 25 minutes, drizzle the baked sweet potatoes with maple syrup and add the chopped bacon.
- Toss to combine and bake for an additional 10 minutes.
- Garnish with parsley before serving.
Notes
- For a spicier version, add a pinch of cayenne pepper.
- Maple syrup can be adjusted based on desired sweetness.
