Southern Maple Sweet Potato

A delicious blend of sweet potatoes and turkey bacon with a maple twist that will sweeten up any meal.

Ingredients

  • 4 large sweet potatoes
  • 4 strips turkey bacon
  • 1/4 cup maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes, then cut them into cubes.
  3. In a large bowl, toss sweet potatoes with olive oil, cinnamon, salt, and pepper.
  4. Spread the sweet potatoes on a baking sheet and bake for 25 minutes.
  5. While sweet potatoes are baking, cook the turkey bacon in a skillet until crispy.
  6. Remove the bacon from the skillet and chop into pieces.
  7. After 25 minutes, drizzle the baked sweet potatoes with maple syrup and add the chopped bacon.
  8. Toss to combine and bake for an additional 10 minutes.
  9. Garnish with parsley before serving.

Notes

  • For a spicier version, add a pinch of cayenne pepper.
  • Maple syrup can be adjusted based on desired sweetness.
