Slow Cooker Corned Beef and Cabbage

A hearty and comforting dish that’s easy to make in a slow cooker.

  • 3 to 4 pounds corned beef brisket
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon black peppercorns
  • 1 teaspoon mustard seeds
  • 6 large carrots, peeled and cut into chunks
  • 1 small head of cabbage, cut into wedges
  • 4 cups beef broth

Instructions

  1. Place the corned beef brisket in the slow cooker.
  2. Add chopped onion, minced garlic, black peppercorns, and mustard seeds on top.
  3. Arrange the carrots around the beef.
  4. Pour in the beef broth.
  5. Cover and cook on low for 8-10 hours, or until the meat is tender.
  6. Add cabbage wedges in the last hour of cooking.
  7. Once done, remove the beef, let it rest, then slice and serve with vegetables.

Notes

  • For extra flavor, consider adding a bay leaf during cooking.
