Shrimp and Avocado Bowls

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, diced
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a skillet over medium heat, add olive oil.
  2. Once hot, add the shrimp and season with salt and pepper. Cook until pink, about 3–5 minutes.
  3. In a large bowl, combine diced avocados, cherry tomatoes, cucumber, and red onion.
  4. Add cooked shrimp and lime juice to the bowl. Toss gently to combine.
  5. Serve immediately in bowls and enjoy!

Notes

  • Feel free to add your favorite grains such as quinoa or brown rice.
