- 4 large russet potatoes
- 1 pound ground beef
- 1 cup frozen peas and carrots
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup beef broth
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 2 cups shredded cheddar cheese
- 4 tablespoons butter
- salt and pepper to taste
- Preheat the oven to 400°F (200°C).
- Wash and dry the potatoes, then poke holes in each with a fork.
Rub them with olive oil and sprinkle with salt.
- Bake the potatoes for about 1 hour or until tender.
- While the potatoes are baking, heat a skillet over medium heat and add the ground beef, onion, and garlic.
Cook until the beef is browned and the onions are translucent.
- Add the frozen peas and carrots, tomato paste, Worcestershire sauce, beef broth, thyme, salt, and pepper to the skillet.
Simmer for 10 minutes.
- Once the potatoes are done, let them cool slightly, then make a slit down the center and fluff the insides with a fork.
- Spoon the beef mixture into each potato and top with cheddar cheese.
- Return to the oven and bake for an additional 10 minutes until the cheese is melted and bubbly.
- Serve hot and enjoy!
Notes
- For a healthier version, you can use ground turkey instead of beef.
