  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • salt to taste
  • pepper to taste
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons fresh basil, chopped

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and cook until translucent.
  3. Add minced garlic and Italian sausage to the skillet. Cook until the sausage is browned.
  4. Stir in diced tomatoes, chicken broth, Italian seasoning, salt, and pepper. Bring to a simmer.
  5. Add the cooked penne pasta to the skillet. Stir to combine and heat through.
  6. Top with shredded mozzarella cheese and cover until the cheese is melted.
  7. Garnish with fresh basil before serving.
