  • 1 pound Italian sausage
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 2 cups spinach
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook the pasta according to package directions; drain and set aside.
  2. In a skillet, heat olive oil over medium heat.
  3. Add the sausage and cook until browned.
  4. Stir in the onion and garlic, cooking until the onion is translucent.
  5. Add the diced tomatoes and chicken broth; bring to a simmer.
  6. Stir in the cooked pasta, Italian seasoning, and spinach.
