Ingredients

  • 2 packets ramen noodles
  • 4 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon chili paste
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 cup mixed vegetables (carrots, bell peppers, broccoli)
  • 2 green onions for garnish

Instructions

  1. In a large pot, bring vegetable broth to a boil.
  2. Add ramen noodles and cook according to package instructions.
  3. In a separate pan, heat sesame oil over medium heat.
  4. Add garlic, ginger, and chili paste, and sauté for 1-2 minutes until fragrant.
  5. Add the mixed vegetables and sauté until they are tender.
  6. Combine the sautéed mixture with the cooked ramen, and stir in soy sauce.
  7. Serve hot, garnished with chopped green onions.

Notes

  • Adjust the level of spice by adding more or less chili paste.
