Ingredients

  • 2 cups cooked rice
  • 1 cup shredded carrots
  • 1 cup red bell pepper, diced
  • 1 cup cucumber, diced
  • 1/4 cup roasted peanuts, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup green onions, chopped
  • 1/4 cup satay sauce
  • 1 tablespoon lime juice

Instructions

  1. In a large bowl, combine the cooked rice, carrots, red bell pepper, cucumber, roasted peanuts, cilantro, and green onions.
