  • ½ cup unsalted butter, chilled
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • ½ cup honey
  • 1 teaspoon vanilla extract
  • ½ teaspoon sea salt
  • 1 cup heavy cream
  • ¼ cup brown sugar
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine flour and sugar, then incorporate chilled butter until crumbly.
  3. Add egg yolk and mix until dough forms, then refrigerate for 30 minutes.
  4. Roll out the dough and press it into a pie pan, bake for 20 minutes.
  5. In a separate bowl, combine honey, vanilla extract, and sea salt.
  6. In another saucepan, whip heavy cream and brown sugar until soft peaks form.
  7. Gradually fold honey mixture into the whipped cream.
  8. Pour the filling into the baked crust and chill for 2 hours before serving.
