  • ½ cup unsalted butter, chilled and diced
  • ¼ cup granulated sugar
  • 1 egg yolk
  • 2 tablespoons ice water
  • 1 cup honey
  • 3 large eggs
  • ½ teaspoon sea salt
  • ¼ cup heavy cream
  • 2 tablespoons flaky sea salt for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, mix flour, butter, and sugar until crumbly.
  3. Stir in egg yolk and ice water, mix well, and form a dough.
  4. Roll out the dough and fit it into a pie pan, then chill for 30 minutes.
  5. Blind bake the pie crust for 20 minutes, then remove from oven.
  6. In a separate bowl, whisk together honey, eggs, and salt until smooth.
  7. Pour the filling into the pre-baked crust and spread evenly.
  8. Bake for an additional 30 minutes or until set.
  9. Let cool, then drizzle with heavy cream and top with flaky salt before serving.

Notes

  • For a richer taste, use dark honey.
