Salsa Verde Chicken & Rice Skillet

A delicious and easy-to-make dish that combines tender chicken, fluffy rice, and a zesty salsa verde sauce.

  • 1 pound chicken thighs
  • 1 cup rice
  • 1 cup salsa verde
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup corn
  • 1 cup black beans, drained and rinsed
  • 1/2 cup cilantro, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Add chicken thighs, season with cumin, salt, and pepper, and cook until browned.
  4. Stir in the rice, salsa verde, and chicken broth, and bring to a boil.
  5. Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
  6. In the last few minutes of cooking, add corn and black beans.
  7. Remove from heat and stir in chopped cilantro before serving.

Notes

  • For extra flavor, marinate the chicken in salsa verde for a few hours before cooking.
  • This dish can be topped with avocado or cheese for added richness.
