Ropa Vieja

Ropa Vieja is a traditional Cuban dish known for its rich flavors and tender meat, perfect for family dinner nights.

  • 2 pounds flank steak
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 4 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 cup beef broth
  • 2 tablespoons red wine vinegar
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the sliced onion and bell pepper, and sauté until softened.
  3. Stir in the minced garlic and cook for 1 minute.
  4. Add the flank steak to the pot, along with the diced tomatoes, cumin, oregano, beef broth, and red wine vinegar.
  5. Bring to a boil, then reduce heat, cover, and simmer for about 2 hours, or until the beef is tender.
  6. Remove the beef and shred it with forks, then return it to the pot.
  7. Season with salt and pepper to taste, and let it warm through for a few minutes before serving.
