- 2 pounds flank steak
- 1 tablespoon olive oil
- 1 onion, sliced
- 1 bell pepper, sliced
- 4 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 cup beef broth
- 2 tablespoons red wine vinegar
- Salt to taste
- Pepper to taste
- Heat olive oil in a large pot over medium heat.
- Add the sliced onion and bell pepper, and sauté until softened.
- Stir in the minced garlic and cook for 1 minute.
- Add the flank steak to the pot, along with the diced tomatoes, cumin, oregano, beef broth, and red wine vinegar.
