Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice sweet potatoes into rounds and place in a bowl.
  3. Drizzle with olive oil, sprinkle paprika and salt, and toss to coat.
  4. Arrange sweet potato rounds on a baking sheet, ensuring they are in a single layer.
  5. Bake for about 25 minutes or until tender and slightly crispy.
  6. Meanwhile, cook turkey bacon in a skillet until crispy, then chop into pieces.
  7. Remove sweet potato rounds from the oven and top with turkey bacon pieces.
  8. Return to the oven for an additional 5 minutes to heat through.
  9. Serve warm.

Notes

  • For a little spice, add cayenne pepper to the sweet potatoes before baking.
