  • 4 slices turkey bacon
  • 1 cup cooked chicken ham, diced
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/4 cup green onions, sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and cut the baby potatoes in half.
  3. Place potatoes on a baking sheet and drizzle with olive oil, salt, and pepper.
  4. Roast in the oven for 25-30 minutes until golden and tender.
  5. Meanwhile, cook the turkey bacon in a skillet until crispy, then crumble.
  6. In a large bowl, combine roasted potatoes, chicken ham, mayonnaise, Dijon mustard, green onions, and crumbled turkey bacon.
  7. Toss everything together gently until well mixed.
  8. Chill in the refrigerator for at least 30 minutes before serving.

  • For added crunch, consider adding diced celery.
