  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, then stir in the vanilla.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Spread half of the dough onto a greased baking sheet.
  7. Spread the raspberry jam over the dough, and then dollop the remaining dough on top.
  8. Use a knife to swirl the dough and jam together.
  9. Bake for 20-25 minutes or until golden brown. Let cool before cutting into squares.

Notes

  • For a more intense raspberry flavor, use homemade raspberry jam.
  • These cookies can also be made with other berry jams.
