  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup pumpkin purée
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup crumb topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix dry ingredients: flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In another bowl, whisk together granulated sugar, brown sugar, pumpkin, oil, eggs, and vanilla.
  4. Combine wet and dry ingredients, mixing until just incorporated. Fold in nuts if using.
  5. Pour batter into the prepared loaf pan and sprinkle crumb topping on top.
  6. Bake for 60-70 minutes until a toothpick comes out clean.
  7. Let cool before slicing.

Notes

  • For best results, use pure pumpkin purée, not pumpkin pie filling.
  • You can substitute applesauce for the oil for a healthier version.
