  • 3/4 cup sugar
  • 4 egg yolks

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a saucepan, combine the pumpkin puree, cream, milk, sugar, egg yolks, vanilla, pumpkin pie spice, and salt. Whisk together until smooth.
  3. Pour the mixture into ramekins or small pots.
  4. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  5. Bake for 25-30 minutes, or until the edges are set but the center still jiggles.
  6. Remove from the oven and cool to room temperature before refrigerating for at least 2 hours.
  7. Serve chilled, topped with whipped cream if desired.
